Mutton in spiced Claret with dumplings This dish is reputed to be one of Elizabeth 1st favourite recipes.
Ingredients. 500g diced Mutton 1 Large onion peeled and finely chopped 1/2 teaspoon each of cinnamon, ginger, cloves,pepper 1 dessert spoon flour 1/4 teaspoon mace 1 pint stock Red Wine pinch salt
Method. 1. Brown the onion and mutton. 2. Combine the flour and spices add to the meat. 3. Add the stock and bring to the boil. 4.Add the red wine and simmer gently for at least 2 hours - but the longer the better this dish keeps improving - add salt to taste.
DUMPLINGS Ingredients. 12oz self-raising flour 4oz butter pinch salt Cold water to bind Method. 1.Rub the fat,salt and flour together, binding with a few drops of cold water 2.Roll out to 2.5 cm thick and cut into 12 small rounds. 3.Bake for 20 minutes.
Serve on top of the spiced mutton with fresh vegetables and the remaining red wine if you have any left by this time! | |
