| Mutton worth waiting for The official classification for Mutton is any sheep over 2 years of age but all Elan Valley Mutton is at least 3 years of age. Our welsh mountain wethers (which are non breeding male sheep) consistently produce a delicious tasting meat having spent 3-4 years grazing the moorlands of the Elan Valley. |

Versatile Mutton Our sheep are slaughtered at our local abattoir and processed by our excellent local butcher. The mutton carcases hang for at least 12 days, it is this combined with the longer cooking times, which produce our very tender and delicious meat, which is very versatile and ideal for a variety of dishes.
