Morroccan Mutton Ingredients. 750g cubed mutton 2 medium onions peeled and chopped 1 teaspoon of cinnamon, coriander and paprika 1 teaspoon plain flour Salt and Pepper 300ml boiling water (Optional) 125g ready to eat apricots cut in half 30g flaked almonds, toasted and a few fresh corriander leaves
Method. 1. Gently fry the mutton and onion 2. Mix the spices, flour and seasoning together 3. Place the mutton and onion in a casserole dish, coating them well with the flour mix. 4 Add the apricots and pour in 300ml of boiling water. 5. Stir and cook for 2 hours in a moderate oven.
Serve with couscous or rice.
